General Physical Description:
- Appearance: A fine, free-flowing powder. It should be uniform in texture and completely free from hard lumps, caking, or evidence of insect infestation.
- Colour: Typically pale yellow to light beige or “creamy yellow.” The Colour should be consistent throughout the batch; a dark brown or greyish tint may indicate poor drying practices or age.
- Aroma: Intensely aromatic, warm, and spicy with subtle citrus/lemon-like notes.
- Flavour: Pungent, sharp, and “biting.” It provides a concentrated heat that is more immediate than fresh ginger.
- Purity: 100% pure ginger. It must be free from added starches, spent ginger (ginger from which oils have been extracted), or artificial Colours.
