  • Texture: The outer hull provides a crispy, slightly crunchy The interior (the kernel) is creamy and oily.
  • Flavour Profile: Notably more bitter and “nuttier” than white sesame. This is due to the high concentration of tannins and calcium in the black hull.
  • Surface: The seed coat is typically smooth but may have slight longitudinal wrinkles under magnification.
